Taste check:
Heat first.
Sweet second.
Smoke last.
Color should read deep crimson with gloss.

Brush generously with firecracker glaze.

Rest 10 minutes only.
Color check: fish should already look red-lacquered, not pink.

🔥 PAN-SEAR (BEST GLOSS)

Heat skillet over medium-high.

Add a touch Habla Habanero® Oil.

Sear trout skin-side down 3–4 minutes until crisp.

Flip, brush more glaze, cook 1–2 minutes.
🔥 OVEN-ROAST (CLEANER LOOK)

Roast at 400°F (205°C) for 10–12 minutes.

Brush once midway.

Finish with a 30–60 second broil if needed.
