1 lb firm white fish (cod, halibut), large chunks

STEP 1 BUILD THE STEW (RUBY-FIRST METHOD):
BLOOM THE BASE: In a wide pot over medium heat: Add Bell Of The Ball® Oil. Sauté onion 4–5 minutes until soft. Add garlic, cook 30 seconds. Stir in tomato paste and cook until brick red and fragrant, 2 minutes. Add Bell Of The Ball® Seasonings and Habla Habanero® Seasonings. Bloom briefly.
STEP 2 SIMMER TO RUBY:
Add crushed tomatoes, stock, and Habla Habanero® Agave. Bring to a gentle simmer. Cook 12–15 minutes until glossy and ruby-deep. Taste. Adjust salt lightly if needed.
STEP 3 ADD THE SEAFOOD (ORDER MATTERS):
Add firm fish first; simmer 3–4 minutes. Add mussels and clams; cover and cook until just opened. Add any quick-cook seafood last (1–2 minutes). Do not stir aggressively. Let the broth do the work.
STEP 4 FINISH & PLATE (COLOR CHECK):
Remove from heat: Finish with: Torn fresh basil. Micro pinch Sassy Me®. Serve with crusty bread on the side, not in the bowl.
STEP 5 FINAL COLOR READ:
Broth: deep ruby red. Glow: orange warmth underneath. Garnish: clean green basil. If it looks orange-forward, pull back the agave next time.
